  • Orange sugar – 5g.
  • Freshly squeezed orange juice – 15 g.

Orange juice is poured into the pitcher along with all the ingredients. In order to decorate the drink, it is recommended to take orange slices. And they emphasize a delicate tart note against the background of vanilla and creamy taste.

Lavender

Ingredients:

  • Cold filtered water – 100g.
  • Lavender flowers – 0.5 tsp.
  • Coffee (ground) – 1.5 tsp.
  • Granulated sugar – 5 g.
  • Cream (11%) – ½ cup.

Preparation:

Pour coffee into a pot, add cold water, and place on low heat. Bring to a boil, but do not boil, but immediately remove the dishes from the heat. After this, the lavender and sugar are ground. The resulting mass is added to coffee. Then pour in the cream and heat the drink for several minutes. After this, beat the coffee with a blender until a thick foam is obtained.   • A teaspoon of vanilla and regular sugar.

First, prepare tall glasses for beautiful serving, preheat them. Mix sugar in pitcher, cream and finished espresso. Place the cappuccino maker in a container and whisk until you get a high foam. Pour the coffee into glasses, garnish with a cocktail straw and serve.

Don't worry if you don't have a coffee machine. Raf coffee can be made at home in a Turk or French press. Brew espresso in a Turk and strain. Raf coffee - what is it? How did he appear? This drink was first made in a Moscow cafe called Caffee Bean in 1996. New (unusual at that time) cafeterias offered a huge number of different coffee options. And one of the regular visitors to this establishment once said that he didn’t really like the taste of coffee. To try to please the client and not fall flat on his face, the barista of this cafe came up with a recipe that combined coffee, cream and sugar. The result was a very original cocktail, which was presented to the capricious client. This man's name was Raphael, or Raf for short.

After a while, looking at his friend who was happily sipping an unusual drink, Raf’s friends also wanted to try it and began asking for the same coffee as Raf’s. This is how the name appeared - raf coffee.

Despite the fact that this drink appeared almost 20 years ago, you rarely see it in local coffee shops. You can try it only in some establishments in Moscow and St. Petersburg. Be sure to try raff coffee someday. You already know what it is.

What does the drink consist of?

Its composition is very simple. The classic version presented to Raphael had only a few ingredients. Today, different cafes offer variations with different syrups. These are the components:

  • 25 ml classic espresso;
  • 100 ml 10% cream;
  • 10 grams of vanilla sugar or a mixture of vanilla and regular sugar in a percentage ratio of 50 to 50.

Rough coffee, the recipe for which involves mixing the ingredients at the initial stage of preparation, turns out very tasty.

Cooking method

First, prepare a classic espresso. To do this, take 7 grams of finely ground grains and pour 30 ml of cold water. Heat it over low heat until foam appears. Remove from stove.

Second, mix the cream and sugar and heat until hot and the sugar dissolves.

Combine espresso and cream mixture and blend using a whisk or cocktail blender. The special taste is given by the persistent foam mass, which is formed through thorough whipping. It is best to serve the drink in transparent glasses.

Raf is a purely Moscow invention. It was invented in 1996-1997 at Coffee Bean, the first coffee shop in Moscow opened according to the American model. When one of the regular guests, Rafael, asked to come up with something for him, three baristas - Gleb Neveikin, Artyom Berestov and Galina Samokhina - prepared coffee with cream and vanilla sugar. Afterwards, fussy friends began to order this cocktail, asking the waiters to bring coffee like Rafa. It was under this name that the baristas prepared the drink; after some time it was simplified. The drink began to be called “raf”. Afterwards, the first Coffeemania opened in Moscow, and the barista team moved there. Raf continued to cook in the new place. The recipe has not changed. The result was a coffee drink that tasted like melted creme brulee ice cream (if we talk about the classic raffe based on vanilla sugar). There are also varieties of raf in which experiments are carried out with the composition of sugar: lavender - white, vanilla and dried lavender flowers, citrus - cane with orange and lime zest.

Gleb became the director of the barista department and the chief roaster of the Coffeemania chain of coffee shops, I don’t know anything about Artyom now, and Galina works in the coffee industry. We didn’t really keep track of when and in which coffee shops raf began to appear, but now it is available almost everywhere, and not only in Moscow.

Raf coffee today

You already know what ingredients are considered traditional for making raf coffee, but other varieties of this coffee drink are becoming more common. So, cream and vanilla sugar are whipped not with espresso, but with Turkish coffee and even instant coffee. Milk is considered an alternative to cream when making raff coffee, but instead of vanilla sugar, you can put cane sugar in a cup. The addition of syrup, cinnamon, chocolate or cognac can radically change the taste of classic raf coffee.

Raf coffee: serving secrets

If you order raf coffee in a coffee shop, they will most likely bring it to you in the same cup as cappuccino. This is explained by the fact that the portions of the listed drinks are equal (about 120 ml). True, in some coffee shops, raf coffee is served in a transparent glass under a latte macchiato. This drink is often decorated with cappuccino or decorative sprinkles.

How to make classic raf coffee at home?

You will need:

  • espresso - 1 serving (35 ml),
  • vanilla sugar - 5 grams,
  • granulated sugar - 5 grams,
  • cream 11% fat - 100 ml.

Recipe No. 1. Method of preparing raff coffee

  1. Pour cream into the pitcher.
  2. Add a teaspoon each of vanilla sugar and granulated sugar.
  3. Pour in freshly prepared espresso (you can’t do without a coffee machine to brew it).
  4. Using a steam vent, beat the prepared ingredients into an airy foam.
  5. Pour the finished drink into a heated cup. We decorate at our own request and enjoy the most delicate taste and delicious aroma of raff coffee.

How to prepare an alternative version of raff coffee if you don’t have a coffee machine or cappuccino maker at home?

You will need:

  • finely ground coffee beans - 1 teaspoon,
  • water - 40 ml,
  • cream - 100 ml,
  • vanilla sugar - 1 teaspoon (can be replaced with vanilla, but just don’t overdo it, otherwise it will add bitterness to the finished drink),
  • regular sugar - 1 teaspoon.

Cooking method

  1. Add vanilla sugar to the cream (to create raff coffee it is recommended to use 11%, but if the fat content of the cream purchased for preparing the drink is slightly higher, we recommend diluting it with milk). Heat in the microwave for 2 minutes at maximum power.
  2. From the specified amount of coffee beans and water, brew coffee in a Turk. If you don’t want to waste time on brewing, you can prepare the base for raf coffee by brewing instant coffee.
  3. Mix heated cream and hot black coffee. Add granulated sugar. Beat until airy foam appears. For this purpose, you can use a blender and even an ordinary whisk.
  4. Pour the finished raf coffee into a heated cup for cappuccino or into a tall transparent glass for latte macchiato. We take a sample or treat guests. Enjoy your coffee!

Recipe No. 2. Honey raff coffee

Ingredients for making honey raff coffee:

  • 50 ml. coffee,
  • 100 ml cream 11% fat,
  • 1 teaspoon honey.

To prepare our honey raf coffee recipe, brew espresso coffee or choose your favorite method.

  1. Heat the cream and add to the coffee.
  2. Add a teaspoon of honey.
  3. Whip the drink with a cappuccino maker from a coffee machine. The result should be a thick, dense foam.
  4. Honey raf coffee is ready. Serve it in cappuccino cups, garnished with a pinch of cinnamon.
  5. Honey raff coffee has a pleasant mild taste. It was invented quite recently in Moscow, but has already become popular and won in several categories in various coffee competitions.

To make coffee according to this recipe, you will need a coffee machine with a cappuccino maker. These days you can buy a coffee maker in an online household appliances store.

I tried citrus raf in “Dudnik”, there is such a chain of coffee shops, many people probably know about them. I generally like the coffee there, but then I decided to try something new, the choice fell on citrus raf, and since then it’s been such a pleasure to drink such coffee.

How to prepare citrus raf

However, I don’t go somewhere very often, and it turned out that drinking citrus coffee only in a coffee shop is not enough for me, so I wanted to figure out how to prepare it at home. And in general, it was just interesting to even find out what was included in its composition - it has such an unusually wonderful taste, so soft, unusual. I started to figure it out.

Citrus raf is prepared in different ways. The same aforementioned coffee shop uses orange zest, as far as I understand, and vanilla syrup. And milk, of course. Quite a strange combination, it’s true, but how delicious it all turns out! And in another establishment I ordered this drink, it contained citrus syrup.

I searched on the Internet, and it turns out that you can also add orange juice to citrus raf, both from tetra packs and freshly squeezed. That’s where I started experimenting with the citrus raffa recipe.

However, it turns out that orange juice causes milk to curdle in coffee. As soon as this became clear, I became concerned about finding orange syrup, I thought that everything would probably work out with it. I bought it in a specialized store where everything for coffee is sold. But it also curdled the milk.

I went searching on the Internet again and found information that citrus additives curdle in coffee if it is too hot. Well, after this, it finally became clear to me how to prepare citrus raf at home.

Citrus raff at home

First we prepare the coffee. I have a drip coffee maker, so I made coffee in it.

Whisk the warm milk, I do this with a small electric milk whisk.

Finally, add steamed milk to the coffee.

The proportions are approximately the following: two parts coffee, one part milk. Although you can have more milk, it’s also tasty and depends only on personal preferences.

And one more important detail - you need to add a little orange syrup, literally about a tablespoon per glass, otherwise the milk in the coffee will curdle again. And it’s not so tasty when there’s a lot of syrup - it then overpowers all the other tastes in the drink, coffee and milk, and it’s not the same anymore.

And here it is in the end - our citrus raf.

Features of preparing citrus raffa

By the way, when I tried to prepare a citrus raffe recipe with orange juice, it seems that I also just added too much juice, and the coffee was too hot. So someday you can try making coffee with juice again, and it’s also interesting to experiment with orange zest, sometime if necessary.

Again, if you don’t want to bother too much with whipping milk for citrus raffa, then you don’t have to whip it. Then we do everything exactly the same - add sugar to two parts hot coffee, one part cold milk and a tablespoon of syrup.

Here is a recipe for citrus raffa at home. I’m sure it can still be improved, but even now this drink can be enjoyed at home, which is, in fact, what I was striving for. And again, my experience may be useful to you. Let's love coffee together!

UPD. I finally tried making citrus raffe with orange zest and natural juice, and it turned out exactly the same, just perfect!

So, let's prepare coffee, this time I prepared it using a coffee machine, but this does not change the essence. Three little zests, squeeze the juice literally from a slice of lemon to a volume of 200-250 ml, add them to the coffee along with sugar.

After this, pour warm milk into the drink - the temperature should be such that the resulting coffee turns out pleasantly warm.

I think if you add a little vanilla sugar to all this, it will be even better, but even without it, the citrus raff prepared in this way pleased me immensely.

So it turns out, by and large, you don’t need anything special, just coffee, milk and an orange. Moreover, this time I used the most ordinary milk, fat content 2.5%, and not baked milk, as at first. So everything turned out to be so simple!
