Vegetable salad “Mistress” with raisins, walnuts and prunes - an original and tasty salad that combines the spicy spiciness of cheese and garlic and the light sweetness of fruit, will decorate any holiday dinner.

Salad ingredients

  • 2 beets,
  • 150 g cheese,
  • 3 carrots,
  • 50-100 g each of raisins, walnuts and prunes,
  • 2 cloves of garlic,
  • mayonnaise.

Salad recipe

  1. Boil the beets for approximately 40 minutes. Cool.
  2. Boiled beets, raw carrots, three cheese on a fine grater. Place on separate plates.
  3. Press the garlic with a garlic press.
  4. Fry the nuts in a dry frying pan to remove the film, and then chop them.
  5. Wash the raisins and prunes, sort them and soak them in boiling water for a few minutes. Grind the prunes.
  6. This salad is layered. With mayonnaise, it is more convenient to season the ingredients for each layer separately, rather than lubricate the layer on the plate.
    1st layer - mix carrots and raisins, season with mayonnaise.
  7. 2nd layer - squeeze the garlic into the cheese and mix with mayonnaise.
  8. 3rd layer - mix beets, nuts, prunes, mayonnaise.

Decorate the “Mistress” salad with a beet rose and walnuts, dust the visible layers of the salad with grated carrots and grated cheese. Let it brew for a while in a cool place and serve. Bon appetit!

The classic “Mistress” salad is an excellent version of a festive layered vegetable salad. The salad is very filling, yet fresh and juicy. If mayonnaise dressing is not suitable for you due to its calorie content, make a lighter dressing by mixing equal portions of mayonnaise and yogurt.

I will serve the salad in portions; you can prepare the salad in a large salad bowl. Layers can be laid out according to your preference.

To prepare the “Mistress” salad according to the classic recipe, we will prepare all the products according to the list. Place the beets in a saucepan and fill with water. Place the pan on the fire and cook the beets until tender for 20-25 minutes. We check the readiness of the beets by piercing the fruit with a knife; if the knife goes in easily, the beets are ready. Drain the water from the beets. Let the beets cool and peel them.

Add garlic passed through a press to the mayonnaise. You can add ground black pepper if you like the dressing spicier.

Soak raisins and prunes in a bowl, pouring hot water over them. Leave the fruit for 10-15 minutes, then drain the water from it, dry it with a napkin and finely chop it with a knife.

Now let's start assembling the salad. I will be making two servings of the salad, so I will divide all the ingredients into two servings.

Leave one half of the beets to decorate the salad, and grate the rest of the beets on a medium grater. Place the beets in a portioned salad bowl or bowl. Lubricate the beet layer with mayonnaise.

We also grate the hard cheese on a medium grater and put it in a salad bowl, coat the layer with mayonnaise.

Peel fresh carrots and grate them on a medium grater. Place the carrots in the next layer. Coat a layer of carrots with mayonnaise.

Lay out the chopped dried fruits.

  2. Place the beets on the stove and wait until they boil. From this point on, cooking will take about forty minutes. It all depends on the size of the tubers. The smaller they are, the faster it will be ready.
  3. Boil the beets until fully cooked. You can check with a knife or toothpick. It is necessary to achieve softness of the root vegetables.
  4. Peel the cooled vegetables and grate them.
  5. You need to grate the carrots. First, wash the fruit and peel it. Then use a grater.
  6. Grate the cheese and also set aside.
  7. Raisins and prunes need to be steamed. To do this, pour boiling water over the dried fruits and cover with a lid. Leave for ten minutes. Afterwards, cut into small bars/cubes.
  8. Peel the garlic cloves and crush them with a press.
  9. Brown the nut kernels in a frying pan without oil. Then cool and then rub between your palms. All the husks will fall off on their own, chop finely.
  10. Now we need to combine some components. So, carrots + raisins, cheese + garlic, beets + nuts + prunes.
  11. Season each food group with mayonnaise.
  12. Place the salad in three layers. The layers will be the 1st, 2nd and 3rd groups. That is, carrots and raisins will go to the bottom, dried fruits and beets will be on top, and garlic and cheese will be in the center.

  • 50 grams of nuts;
  • 2 green onions;
  • 30 grams of arugula;
  • 30 grams of iceberg;
  • 30 grams of watercress.

How to prepare mistress salad:

  1. First of all, boil the chicken meat. First, wash the fillet and clean it. It is necessary to cut off the skin, if any, as well as veins and films. Wash the fillet again and boil in water with spices.
  2. Cut the cooled meat into large pieces or simply tear into large fibers.
  3. Wash the prunes and cut them into the same size as the raisins.
  4. Squeeze out the lemon juice, remove the zest with a special grater, and place in separate containers.
  5. Wash the green onions, shake off and chop finely.
  6. Roast the nuts and grind them in a blender bowl. Do not grind into powder, let there be large pieces.
  7. Rinse and dry green leaves.
  8. In a bowl, combine chicken meat, raisins, prunes, yogurt, curry powder, lemon zest, arugula, iceberg, watercress and also 70 ml of regular drinking water.
  9. Season with other spices to taste, mix everything and leave for five minutes.
  10. At this time, prepare salad dressing. In another bowl, combine oil, lemon juice, mustard. Season to taste and whisk.
  11. Season the dish with sauce and stir.
  12. Sprinkle the salad with nuts and green onions.
  13. You can serve immediately, but it is better to wait at least two hours.

Important: if grainy mustard is difficult to obtain, you can use regular mustard. Or replace it with mayonnaise. You will get a new, unusual taste.

  • 400 grams of cabbage;
  • 200 grams of carrots;
  • 150 grams of fresh cucumbers;
  • 200 grams of raisins;
  • 200 grams of prunes;
  • 20 ml olive oil.

  1. Wash the cabbage, remove the top leaves and chop.
  2. Peel the carrots, wash and cut into strips or grate.
  3. Wash the cucumber, dry and cut into strips. Peel if desired.

Ingredients for 2 servings:

  • beets (baked) 2 pcs.;
  • large carrots (raw) 1 pc.;
  • hard cheese 80-100 g;
  • prunes 5 pcs.;
  • raisins optional;
  • garlic 1-2 cloves;
  • a handful of walnuts;
  • mayonnaise 5-7 tbsp. l.;
  • salt and sugar as needed.


How to prepare “Mistress” salad with beets and prunes

To prepare this beet and prune salad, use fresh carrots. It is better to take juicy and sweet carrots, taste them before starting cooking. On the fine side of a grater, chop the peeled carrots and place in a bowl. Add mayonnaise and, if desired, a handful of raisins. Stir and set the container aside.


First, for the salad, bake several medium beets in foil at a temperature of 180 degrees (30-40 minutes). After such heat treatment, the beets turn out to be very rich in taste and not watery, as after cooking. Peel and grate the tubers and place in a separate bowl. By the way, if you have trouble washing your hands after working with beets, try rubbing your palms with lemon.


Dry the shelled walnuts in a hot frying pan until tender. Then cool the nuts slightly and grind them in a mortar until they form coarse crumbs. Add nuts to the beets. Cut the prunes into cubes and add them to the beets. If the prunes are dry enough, pre-soak them in water or cognac (option for adults).


Finely chop a clove of garlic on a grater and combine with beets, season with mayonnaise.


Add the second clove of garlic and mayonnaise to the grated hard cheese and mix with a fork. Save some of the grated cheese to sprinkle on top of the salad.

After all the salad ingredients are prepared, select a suitable container for serving it. As an option, I suggest serving this salad in portions, laying it out in layers in a ring. In this case, it is a ring made from a bottle that has been given the shape of a heart.


The bottom layer of the salad will be carrots, place in a ring and compact with a fork.


Place the cheese mixture on the carrots, smooth and lightly press the layers. There is no need to coat additional layers of salad because mayonnaise has already been added to all the ingredients.


Now place the beetroot layer on the salad.


And all that remains is to add the last layer to decorate the salad in the form of grated cheese. Remove the ring carefully so as not to damage the salad.

  7. Sprinkle the top of the salad with the other half of the walnuts and arrange the pine nuts in a circle; put a little dill or parsley in the center for decoration.
  8. This festive dish will look more beautiful if you form it using a culinary ring. Do not make the “Mistress” salad in advance; prepare it just before serving, so that the vegetables do not have time to release a lot of juice.

The French Lover salad is even more nutritious due to the chicken meat it contains. If you are preparing for a romantic dinner, it will be enough to prepare this one salad and some light dessert. The combination of vegetables, dried fruits, nuts, meat with orange notes is truly tempting.

Ingredients:


Preparation:

  1. Boil the chicken fillet in salted water until tender, let it cool directly in the broth (this will make the meat more juicy). Then cut it into small pieces or divide it into thin fibers. In this salad, you can use other parts of the chicken carcass, for example, you can take meat from the leg.
  2. Pour warm water over the raisins to soften, keep in this state for about 20 minutes, then drain the water and let dry.
  3. Peel the onion, wash it, cut it into half rings and place it in a bowl. Make a solution of vinegar and water, pour it over the onions and let marinate for 15-20 minutes. Before adding onion half rings to the salad, squeeze them thoroughly from the marinade.
  4. Peel, wash and grate the carrots on a fine grater.
  5. Grind the walnuts using a fine grater, blender or mortar and pestle.
  6. Grate the cheese on a fine grater.
  7. The salad is assembled in reverse order, so take a deep salad bowl, cover it with cling film and get started. Sprinkle chopped nuts in the first layer, make a light mayonnaise mesh and place cheese on top. Next, the sequence of layers is as follows: mayonnaise - carrots - mayonnaise - raisins - onions - chicken meat - a generous layer of mayonnaise. Now cover the salad bowl with a flat dish and carefully turn the salad onto it.
  8. Peel the orange, cut into cubes and spread over the entire surface of the salad. Place the dish in the refrigerator for a couple of hours so that the salad is properly soaked.
