INGREDIENTS:

  • 500 g puff pastry
  • 600 g white cabbage
  • 4 eggs
  • 20 g fresh herbs (dill, parsley)
  • 70 g butter
  • 1 tsp. Sahara
  • salt, ground black pepper

  • egg yolk + 1 tsp. milk
  • 1 tsp. sesame seeds (optional)

COOKING METHOD:

1. In order to bake a layer pie with cabbage, first prepare the filling. To do this, wash the white cabbage thoroughly and chop it into long thin strips. In total, you should get 600 g of chopped cabbage leaves, so you need to choose a medium-sized head of cabbage, at least 1 kg.

2. Melt the butter in a deep frying pan or saucepan, add the cabbage and fry it until soft and lightly browned for 10 - 15 minutes, then cool.

The cooking time for cabbage depends on its shelf life. Young cabbage with greenish leaves will be ready in 10 minutes, while old-harvest cabbage that has been sitting for a long time may require 20-25 minutes to stew.


3. Meanwhile, boil the eggs hard for 10 minutes from the moment the water boils, cool, peel and cut into large cubes.

4. Wash, dry and chop fresh herbs.

5. In a bowl, mix fried cabbage, boiled eggs and herbs. Season everything with salt, pepper, sugar and mix thoroughly. The cabbage and egg filling for the layer pie is ready!

6. Thaw the puff pastry according to the instructions on the package and roll out on a floured surface into a thin rectangular layer.

Advice! To make this pie, you can use either yeast or yeast-free puff pastry, depending on what you have in the freezer. A pie made from yeast dough turns out to be a little more fluffy and airy, but the difference is not fundamental.

7. Place the filling of cabbage and boiled eggs in the middle part of the rectangle.

8. First fold the long edges of the dough towards the center, and then the side ones and seal them well so that the filling does not fall out.

9. Turn the layer pie with cabbage over and place it on a baking sheet lined with parchment or a silicone mat, seam side down.

10. Using a sharp knife, make several slits on top to allow steam to escape, then brush the cabbage pie with egg yolk mixed with milk and, if desired, lightly sprinkle with sesame seeds.

11. Bake the pie at 190°C for 30 minutes. If the surface of the pie becomes very brown during cooking, cover it with foil.

Sometimes you really want to pamper your loved ones with some delicious low-calorie dish, which, moreover, is quite inexpensive in cost and does not require rare ingredients for preparation. For example, bake pies with cabbage, which everyone in our family loves, but we don’t always have enough time and energy to cook them. My mother-in-law recently gave me an idea: to make a quick covered layer pie with cabbage according to her signature recipe. I decided to do this experiment while preparing for a family picnic, and the result exceeded all my expectations - the product turned out simply amazingly tasty, tender and “flew away” from the table in a matter of minutes.

Today I have prepared for you my mother-in-law’s recipe for making cabbage pie from ready-made puff pastry or yeast-free dough.

Option with yeast dough Kitchen appliances

Choose the right cookware and kitchen tools to make the perfect cabbage puff pastry pie:

  • deep bowls (several pieces, volume from 400 to 800 ml);
  • metal baking tray with a diameter of 25 cm;
  • a piece of parchment paper about 30 cm long;
  • metal whisk;
  • pan with non-stick coating with a volume of 500 ml;
  • tablespoons and teaspoons;
  • grater;
  • several wooden skewers;
  • frying pan with a diameter of 20 cm;
  • fine sieve;
  • rolling pin;
  • wooden spatula.

Also, I would suggest you to use a blender or mixer while making the dough to mix it properly and easily.

Did you know? Using this recipe, you can prepare a puff pastry pie not only with fresh, but also with sauerkraut in an amount of about 300 g. Just make sure that it does not contain excess liquid, and also mix the shredded cabbage mass with a tablespoon of granulated sugar.

  • We set the oven to heat up to 180-200 degrees.
  • Line a baking tray with baking paper and coat it with margarine.

  • Gather the dough into a ball and add flour to it.

  • Then we divide it into two parts, roll out the first to a thickness of 3 mm (if the shape is small, you can immediately put the dough into it).

  • Place the filling on the rolled out layer and level it with a spatula.

  • Roll out the second part of the dough to a thickness of about 5 mm. Cover the filling with it and carefully pinch the edges.

  • Carefully transfer the pie to a baking sheet.
  • Using a wooden skewer or your finger, make small holes in the top of the dough.

  • Beat the yolk a little with a whisk and cover the surface of the product with it.


    Important! You can also use a whole egg or a special commercial lubricant sold in stores for lubrication. But in any case, try to choose a lubricant that is tasteless and odorless so as not to overpower the aroma of the cake.

  • Place the baking sheet in the oven and keep it there for about 20 minutes.
  • Then check the crust for doneness and remove the baking sheet from the oven.

  • Let the pie cool slightly and transfer it to a plate.

  • Made! Your aromatic cabbage pie is completely ready to be served on the table, where your family and guests are already salivating. There is no need to decorate this pie additionally, as it looks simply amazing, but you can beautifully decorate the product with feathers of parsley, dill or cilantro, and also sprinkle with sesame seeds.     In this article I will tell you how to make a delicious cabbage pie. I will use store-bought puff pastry as the base.

    Let's start preparing cabbage pie with a yeast layer.


    Ingredients
    • Puff pastry 1 kg.
    • Cabbage
    • Carrot
    • Chicken egg 3 pcs.
    • Tomato paste 1 tbsp. l. (optional)
    • Milk 1 tsp.
    • Salt, sugar, seasonings to taste
    Sequencing

    First you need to defrost the dough. To do this, lay it out and wait for it to defrost. Then turn on the oven to start preheating.


    Peel and grate the carrots, and finely chop the cabbage. Place everything in the pan and add 1 tablespoon of tomato paste.


    Add salt, sugar and seasonings to your taste. Mix everything thoroughly and turn on low heat. Continue simmering the carrots and cabbage until fully cooked.

    Boil 2 eggs hard and then cool them. Peel the eggs and chop them finely. Add chopped boiled eggs to the cabbage and wait until the filling has cooled.


    Place baking paper on a baking sheet and sprinkle water on it. Then lay out 2 layers of defrosted puff pastry and place the prepared filling in the center.


    Take the remaining 2 layers of dough and roll it out a little. These layers should be larger in size than the lower ones. Make slanting cuts in the center of the dough layers.


    Take a raw egg and separate the yolk from the white. Brush the edges of the dough containing the filling with egg white. Place the cut, rolled out dough on top and press lightly around the edges.


    Mix the yolk with milk and mix everything thoroughly. Brush the top of the pie with the mixture.

    Bake the pie in an oven preheated to 220 C for 40 minutes.


    The result is 2 delicious cabbage pies, one of which was immediately eaten.

    We wash the head of cabbage and remove the top leaves (they are usually damaged). Then chop the cabbage quite finely with a knife or using a shredder.




    Place the cabbage in a saucepan, add a little oil and simmer over low heat for about half an hour until the cabbage is soft.




    Cook the eggs until firm, about 5-8 minutes. Then we clean them and chop them finely with a knife.
    Chop the washed greens with a knife.
    Mix cabbage with eggs and herbs, add salt and seasonings to taste.




    We defrost the dough in advance so that you can work with it.
    Place a sheet of dough on a baking sheet, spread the filling on it, but do not reach the edges of the dough.






    Cover the filling with another sheet of dough and pinch the edges. We coat the top with a loose egg, make a few punctures with a fork and place the baking sheet in the oven.

    You will need:

    • finished dough - 500 g;
    • cabbage - 1 fork;
    • eggs - 5 pcs.;
    • a little flour and salt;
    • vegetable oil.

    Preparation

  • Finely chop the cabbage, use a special shredder. Fry it in oil, simmer for 20 minutes, add salt.
  • Boil the eggs and chop them in a convenient way. Mix the filling once the ingredients have cooled.
  • Take the dough out in advance and defrost it. Roll out the sheet into a square and place on parchment paper.
  • Place the filling in the middle, occupying more than half the surface of the layer. Cut the free edges into strips, each 4 cm wide. Connect the opposite strips, as if braiding. They should go over the top of the filling.

    • cabbage - 400 g;
    • carrots - 200 g;

  • Sift the flour, add ice-cold butter, chop it with a knife, and mix with the flour.
  • Pour lemon juice into ice water, add salt, mix.
  • Add water to the flour mixture in minimal portions, mixing with a spoon (or in a food processor).
  • Roll out the dough into the shape of a baking sheet, place the filling of cabbage, stewed with carrots, seasoned with salt and pepper. Place another layer on top, make cuts in it, and decorate. Bake for 25 minutes in an oven preheated to 200°.

    The recipe for making cabbage pie from puff pastry yeast dough is similar to the previous one. Nuances are present only in the preparation of the test itself.

    You will need:

    • dry yeast - heaped teaspoon;
    • flour - 500 g;
    • milk - 250 ml;
    • sugar - 80 g;
    • butter - 250 g;
    • salt - a pinch;
    • cabbage, eggs for filling.

    Preparation

  • Dissolve yeast in warm milk, sift flour, soften butter.
  • Add sugar to flour, softened butter to milk, stir.
  • Add the flour to the butter mixture and mix until soft.
