This is a simple recipe for strawberry pies especially for those who don’t like to fuss with dough for a long time. I prepared a quick dough using kefir. I always use this dough recipe when preparing whites and pies with various fillings. You can make strawberry pies using your favorite dough recipe.

Add soda to kefir and stir. Let stand for 5 minutes.
Then add the egg and butter. Mix well.
Adding flour in parts, knead an elastic dough that does not stick to your hands. The dough should not be very steep. To make the pies airy, it is better to add flour when rolling out the dough. Cover the dough and leave to rest for 15-20 minutes.
Wash the berries, remove the sepals and finely chop.
Cut a piece of dough, roll it into a rope and cut into pieces. Roll out the pieces of dough into flat cakes.

In spring and summer, during the season when juicy and aromatic strawberries go on sale, I often bake very tasty yeast pies with strawberries in the oven for my household. You can learn how to bake such rich pies from my step-by-step recipe with photos.
Products for pies:
First, we need to make yeast dough. Dissolve the yeast in warm milk, and beat the margarine, 100 grams of sugar and two eggs in a blender.
Then combine the milk and whipped mixture in a deep bowl and mix thoroughly.
Divide the amount of flour indicated in the recipe in half. At the stage of kneading the dough, we will need 300 grams of flour. Mix the pre-sifted flour into the dough in small portions.
Then let the dough rise in a warm place for forty minutes.

Add the remaining 300 grams of flour to the dough, knead the dough and let it rest for another fifteen minutes.
During this time we will have time to prepare the berries for the filling. First, you need to wash the strawberries and remove their tails.
For pies, try to choose small strawberries; if you have large berries, then they need to be cut in half. Sprinkle the sorted strawberries with starch. This is done so that during baking the juice does not flow out of the pies, but is retained in the berries.
Let's start forming the pies. From a large piece of dough, tear off pieces the size of a tennis ball with your hands. Try to ensure that the pieces of dough are the same, then the pies will look neat and bake evenly.
We first form a ball from a torn piece of dough, and then, using a rolling pin, lightly roll it into a flat cake. Pour a teaspoon of sugar into the center of the cake and spread the filling (2-3 strawberries).
Then we mold the pie like a dumpling, but we wrap its upper edge inward.

In the end, I ended up with half a tray of pies. Place the pies in a warm place for half an hour until they rise.
Before baking, brush with egg wash using a pastry brush.
Try not to press so that the dough does not settle. We will bake the yeast pies with strawberries in a preheated oven over medium heat for twenty minutes.

It is advisable to let them cool before serving. But the seductive aroma of fresh baked goods attracted my household and a large plate of hot pies was eaten in a matter of minutes.

Ingredients:
500g strawberries
100g sugar
2 tbsp. corn starch
370g flour
250ml mineral water
3g salt
100 butter at room temperature
350g vegetable oil for frying
1 egg for brushing pies
1) Cut the washed and peeled strawberries into cubes.
2) Cover the sliced strawberries with sugar and leave for 30 minutes to let them release their juice. After 30 minutes, add 2 tablespoons of cornstarch and stir.
3) Pour the strawberries into a saucepan and cook over low heat, stirring constantly until it boils. After boiling, simmer for a few more minutes to remove the starch taste. Remove from heat and let cool completely.
Making quick puff pastry
1) Sift flour into a bowl, add a pinch of salt and mineral water.
2) Knead a soft dough. It should be elastic and pliable. You may need a little more flour.
3) Roll out the finished dough into a layer 5 mm thick, grease the dough with softened butter. Cut the dough into strips 2-3 cm wide, lay the strips on top of each other in a column, tuck all layers into a roll, lay the roll flat and roll out with a rolling pin to a thickness of 5 mm, sprinkling the table with flour so that the dough does not stick.
The more you roll out and cut the dough, the more flaky and crispy the pies will be. Repeat this process 5 times.
4) Roll out the layered dough into a layer of 40x30cm, cut the layer into 6 equal pieces of approximately 10x12cm.
5) To prevent the envelopes from spreading during frying, brush the edges around the perimeter with beaten egg.
6) Place the strawberry filling on one side of the dough, fold the pieces in half, one edge to the other, seal the edges with a fork, pressing lightly so that the dough does not come apart when frying. Now brush each pie with an egg.
7) Fry the pies in hot vegetable oil for 2-3 minutes on each side. As soon as the edges are browned, immediately turn it over.
8) Place the finished pies on a paper towel.
