How to cook pies with frozen strawberries in the oven

  1. We take the berries out of the freezer and leave them to defrost at room temperature.
  2. Now we need to sort out our yeast dough, so we pour our water into a convenient container and heat it up a little. It is important to note here that there is no need to heat the liquid very much - high temperature will ruin our yeast. The water should be slightly warmer than room temperature.
  3. Pour the yeast into the water, stir and leave for a while.
  4. Pour warm milk into a fairly deep bowl, add 3 chicken eggs, and also add salt and both types of sugar. Mix everything thoroughly until the solid particles are completely dissolved.
  5. Place the butter in the microwave for a while until it becomes completely liquid; if desired, you can use a water bath. Pour the melted butter into the milk mixture, and add the already infused yeast.
  6. Gently pour the sifted flour into our liquid and mix constantly. It is important to knead the dough thoroughly so that it is smooth and soft.
  7. When the dough is kneaded, transfer it again to a deep bowl and cover with a cloth. It should rise properly, so set it aside for a couple of hours. Just remember to check the dough from time to time, it may expand too much, so at such times you should compact it a little.
  8. Around this time, our strawberry should have completely thawed, so we drain the released liquid from it and cover it with sugar. If after a few minutes of this you find more juice, then drain it too.
  9. Place the dough on a floured work surface. We need to divide it into small pieces, from which we will subsequently make pies. Their size depends only on your wishes, so by rolling out one such ball of dough, you can roughly determine how large the pie will be.
  10. Place a little strawberry in the center of each rolled out pancake, then pinch the edges and place the pancake on a baking sheet lined with parchment.
  11. As you remember, we have one more egg left, we need it for greasing. So we break it into a small bowl, beat it with a fork and carefully grease our pies with the resulting mass. If one egg is not enough, take two.
  12. Place our baking sheet in the oven for forty minutes, which should be preheated to 190 degrees. The characteristic ruddy color of the dough will tell you that the pies are ready.
  13. After this, take out the pastries, let them cool a little and serve them for tea.

By the way, if you don’t want to bother with preparing the dough, you can replace it with store-bought puff pastry. These pies need to be folded in the form of envelopes, and they are in no way inferior in taste to those we prepared in this recipe.

Pies with frozen strawberries and rhubarb

Experienced housewives never miss the opportunity to make as many supplies as possible during the summer season. Such foresight rewards the whole family in winter, when fragrant pastries filled with frozen summer gifts appear on the table.

Ingredients

  • Frozen rhubarb – 0.4 kg;
  • Frozen strawberries – 0.4 kg;
  • Wheat flour – 0.5 kg;
  • Chicken eggs – 5 pcs;
  • Fat cottage cheese – 0.5 kg;
  • White granulated sugar – 6 tbsp;
  • Sour cream – 4 tbsp;
  • Baking powder – 2 tsp;
  • Salt – a couple of pinches;
  • Starch – 2 tbsp;
  • Purified water – 4 tbsp.

How to make pies with frozen strawberries and rhubarb

  1. Remove the frozen rhubarb and strawberries from the freezer and set to defrost at room temperature.
  2. We need to grind the cottage cheese, this can be done using a sieve, or just use a fork. In the second case, the structure will be less homogeneous.
  3. In the bowl in which we have the crushed cottage cheese, add 4 chicken eggs, 2 tablespoons of sugar and sour cream. Mix everything until the mass becomes homogeneous. For convenience, you can use a mixer.
  4. Separately mix the sifted flour, salt and baking powder. After this, carefully add the dry mixture to the curd mass and knead the dough. Cover with film and set aside.
  5. If our rhubarb was frozen unpeeled, then we clean it, and then chop it, and also chop the strawberries.
  6. Pour water into a saucepan, add 2 tablespoons of sugar and add rhubarb. Place on the stove for a few minutes until the rhubarb softens, then drain the liquid and send the slices to the strawberries.
  7. Pour the remaining 2 tablespoons of sugar and starch into a bowl, mix our filling.
  8. Divide the dough into small balls, roll them out into flat cakes and place 1 tablespoon of our filling in the center of each, pinching them together. Place the formed pies on parchment paper, which is laid on top of a baking sheet.
  9. Beat the remaining egg with a fork and brush our pies with it. After this, put it in the oven for a third of an hour, setting it to 180 degrees.

Due to the fact that we have cottage cheese in the dough, it will turn out very soft, so little sweet lovers will definitely be completely delighted.

  • Vanilla sugar – 1 package;
  • Dry yeast – 4 tsp;
  • Milk – 150 ml;
  • Flower honey – 2 tsp;
  • Butter – 100 g;
  • Salt – 1 tsp.
  • How to bake pies with frozen strawberries

    1. According to tradition, we set the strawberries to defrost, so that this happens faster, you can put them in a colander.
    2. We need to activate the yeast. To do this, heat half of our milk a little (just not too much), add yeast and add honey and a little flour. Place in a warm place for half an hour.
    3. When the specified time has passed, break 2 eggs into a container, add 100 grams of sugar, melted butter, vanilla sugar, the remaining half of the milk and salt. Stir, then add flour little by little and knead the dough.
    4. Set the resulting mass aside, covering it with a cloth. It should rise properly.
    5. Finely chop the strawberries, add cottage cheese, 100 grams of sugar, 1 chicken egg and starch. Mix everything well.
    6. Divide the dough into 16 identical balls, then roll them out and place the filling in the center of each. After this, we pinch the pies and place them on a baking sheet greased or covered with parchment.
    7. Beat the last egg and brush the pastry. Place in the oven for a third of an hour at 180 degrees.

    These pies with frozen strawberries and cottage cheese will become a real decoration for any table. The most interesting thing is that children sweep away this healthy food at the speed of light, although they are not very fond of cottage cheese in its pure form.

    This is a simple recipe for strawberry pies especially for those who don’t like to fuss with dough for a long time. I prepared a quick dough using kefir. I always use this dough recipe when preparing whites and pies with various fillings. You can make strawberry pies using your favorite dough recipe.

    Products we need:

    • granulated sugar – 150 g;
    • fresh yeast – 30 g;
    • starch – 20 g;
    • vanillin - 1 packet;
    • strawberries – 200 gr;
    • flour – 600 gr.

    How to bake strawberry pies in the oven

    First, we need to make yeast dough. Dissolve the yeast in warm milk, and beat the margarine, 100 grams of sugar and two eggs in a blender.

    Then combine the milk and whipped mixture in a deep bowl and mix thoroughly.

    Divide the amount of flour indicated in the recipe in half. At the stage of kneading the dough, we will need 300 grams of flour. Mix the pre-sifted flour into the dough in small portions.

    Then let the dough rise in a warm place for forty minutes.

    Add the remaining 300 grams of flour to the dough, knead the dough and let it rest for another fifteen minutes.

    During this time we will have time to prepare the berries for the filling. First, you need to wash the strawberries and remove their tails.

    For pies, try to choose small strawberries; if you have large berries, then they need to be cut in half. Sprinkle the sorted strawberries with starch. This is done so that during baking the juice does not flow out of the pies, but is retained in the berries.

    Let's start forming the pies. From a large piece of dough, tear off pieces the size of a tennis ball with your hands. Try to ensure that the pieces of dough are the same, then the pies will look neat and bake evenly.

    We first form a ball from a torn piece of dough, and then, using a rolling pin, lightly roll it into a flat cake. Pour a teaspoon of sugar into the center of the cake and spread the filling (2-3 strawberries).

    Then we mold the pie like a dumpling, but we wrap its upper edge inward.

    If you are more accustomed to another method of sculpting pies, you can use it.

    In the end, I ended up with half a tray of pies. Place the pies in a warm place for half an hour until they rise.

    Before baking, brush with egg wash using a pastry brush.

    Try not to press so that the dough does not settle. We will bake the yeast pies with strawberries in a preheated oven over medium heat for twenty minutes.

    2) Cover the sliced ​​strawberries with sugar and leave for 30 minutes to let them release their juice. After 30 minutes, add 2 tablespoons of cornstarch and stir.
    3) Pour the strawberries into a saucepan and cook over low heat, stirring constantly until it boils. After boiling, simmer for a few more minutes to remove the starch taste. Remove from heat and let cool completely.

    Making quick puff pastry

    1) Sift flour into a bowl, add a pinch of salt and mineral water.
    2) Knead a soft dough. It should be elastic and pliable. You may need a little more flour.
    3) Roll out the finished dough into a layer 5 mm thick, grease the dough with softened butter. Cut the dough into strips 2-3 cm wide, lay the strips on top of each other in a column, tuck all layers into a roll, lay the roll flat and roll out with a rolling pin to a thickness of 5 mm, sprinkling the table with flour so that the dough does not stick.
    The more you roll out and cut the dough, the more flaky and crispy the pies will be. Repeat this process 5 times.
    4) Roll out the layered dough into a layer of 40x30cm, cut the layer into 6 equal pieces of approximately 10x12cm.
    5) To prevent the envelopes from spreading during frying, brush the edges around the perimeter with beaten egg.
    6) Place the strawberry filling on one side of the dough, fold the pieces in half, one edge to the other, seal the edges with a fork, pressing lightly so that the dough does not come apart when frying. Now brush each pie with an egg.
    7) Fry the pies in hot vegetable oil for 2-3 minutes on each side. As soon as the edges are browned, immediately turn it over.
    8) Place the finished pies on a paper towel.
