At a temperature of +1°...+2°C, the fruits of these varieties are stored until January and, due to this quality, can be classified as winter varieties.
The group of varieties with a fruit shelf life of 91-150 days is the most numerous. The maximum shelf life of these varieties is February, with more long-term storage they lose their taste (Martovskoye, Buninskoye, Orange, Pobeda Chernenko, Slava Peremozhtsev, Osenneye Polosatoye and others), and fade. In the practice of storing, especially large batches of fruits, it is important to know the main diseases and signs of the end of storage of each pomological variety. Late-winter varieties are characterized by fruit diseases such as rot, wilt, and barn scab, which develops especially actively after February on unstable varieties. Early winter and autumn varieties are more often characterized by physiological diseases: tanning, wilting, low-temperature burn, overripening, browning of the pulp.
For example, fruits of the varieties Northern Sinap, Rossoshanskoe Polosatoe, Mekintosh, Vityaz, Lobo, Zhigulevskoe are susceptible to barn scab.
The fruits of the Pepin Shafranny, Zhigulevskoe, Mezenskoe, and Osennye Aloe varieties suffer from low-temperature burn in some years. In varieties such as Mekintosh, Renet Chernenko, Welsey, Olimpiyskoe, Orlovskaya Garlyanda, Pamyat Voinu, Bessemyanka Michurinskaya, Korichnoe Novoe, Melba, fruits in storage are subject to severe wilting.
For production, we need, first of all, high-keeping varieties that react poorly to changing weather, with a relatively constant shelf life of fruits over the years. This is especially important for predicting the end of storage and drawing up a schedule for the sale of fruits when storing them in large refrigeration chambers and in chambers with a controlled gas environment, where monitoring the condition of the fruit is difficult.
We have found that many varieties have significant variability in the duration of fruit storage depending on the conditions of the year. Thus, the shelf life of fruits of the Zhigulevskoye variety varied from 79 days in 1974 to 165 days in 1980, and of the Renet Chernenko variety - from 86 days in 1977 to 210 days in 1979. High variability in the keeping quality of fruits of the same variety, depending on the conditions of fruit formation, is indicated by high coefficients of variation (V%) - from 9 (varieties Sinap Orlovsky, Bessemyanka Michurinskaya, Nadezhnoe) to 38% (variety Korichnoye Novoe) (Table 8) .
More constant keeping quality of fruits over the years (variation coefficient no more than 10%) is typical for the following varieties: Sinap Orlovsky (V = 9%), Northern Sinap (10%), Bessemyanka Michurinskaya (9%), Nadezhnoe (9%).
The fruits of the varieties Antonovka Obyknovennaya, Antonovka Novaya, Mezensky, and Orange were better preserved in cool or very wet years. For most varieties, the maximum shelf life of fruits is formed in years with sufficient heat (the sum of active temperatures for May - August is more than 2000°) and sufficient precipitation during this period (more than 300 mm). In such years, the following varieties had the maximum shelf life: Veteran (212 days), Melba (110), Mekanis (213), Orlovskoe Polosatoe (168), Orlik (222), Pepin Shafranny (208), Renet Chernenko (210), Buninskoe (185). For most varieties in the Non-Chernozem Zone, the limiting factor for the formation of marketable, shelf-stable fruits is heat.
Heavy rainfall 4-6 weeks before fruit ripening has an adverse effect on the keeping quality of fruits. Physiological disorders and overripening of fruits are observed.
An important factor determining the quality and storage potential of fruits is their maturity when picked. In the conditions of central Russia, the weight and size of fruits increase especially rapidly in the last two weeks before harvesting. Therefore, very early harvesting of fruits leads to a crop shortage of 10-30% and negatively affects the commercial and consumer qualities of the fruits. Late harvesting increases the percentage of carrion, negatively affects the overwintering of the tree, worsens the keeping quality of the fruit, and leads to significant losses during storage.
Harvesting dates are set specifically for each variety, taking into account the climatic zone. To establish the degree of ripeness, a number of physical and chemical indicators are used: fruit color, strength of attachment of fruit to the branch, pulp density, seed color, iodine test for starch, chemical composition, the sum of active temperatures and other indicators. Such an indicator as the starch content in fruits has become widespread. For a number of varieties, we have developed and recommended indicators of optimal harvest maturity in the conditions of the south of the Non-Chernozem Zone.
You can also use an indicator such as the number of days from mass flowering to optimal harvest maturity. In the southern Non-Black Earth Zone, late winter varieties require 118-120 days from mass flowering to ripening, winter varieties - 114-116 days, early winter and autumn varieties - 108-110 days.
To increase the shelf life of fruits great importance have storage conditions and especially the temperature and composition of the gas environment. The best temperature, as established by many years of practice, for most apple varieties is from 0 to +2°C, with deviations of no more than 0.5°C. Some varieties may be damaged at 0°, which is manifested by browning of the flesh or the appearance of sharply defined browning of the skin along the diameter (low-temperature burn). For such varieties, the recommended storage temperature is -f2°…+3°. These are Antonovka Ordinary, Antonovka Novaya, Babushkino, Mezenskoe, Autumn Aloe, Welsey.
Storage of fruits under conditions of altered gas composition (RGS or MGS) is carried out at increased content in the atmosphere carbon dioxide(5-6%) and low oxygen (2-8%) and temperature +2^...+4°С. Carbon dioxide concentrations above 10% are dangerous, causing burns and browning of the flesh.
Abroad, 20-30% of apples are stored in a controlled gas environment. This provides great advantages compared to conventional refrigerated storage: the storage duration increases by 2-3 months, the natural loss of weight and losses from microbiological spoilage are reduced by 3-4 times. The fruits have an attractive appearance, retain the freshness of the garden, do not fade, remain juicy, and the main color is greenish.
The gas regime is created or naturally- due to the respiration of fruits, or artificially - using gas generators.
The results of storing apples in a gas environment are largely determined by the selection of appropriate varieties.
High quality fruits were obtained when storing the late summer varieties Melba and Mezenskoe in the RGS; autumn - Bessemyanka Michurinskaya, Osennee Polosatoe, Orlovskoe Polosatoe, Osennee Aloe, Glory to Peremozhtsam; winter ones - Veteran, Zhigulevskoye, Cinnamon New, Mekanis, Mekintosh, Orlik, Kulikovskoye, Olimpiyskoye, Orlovskaya Garland, Memory of the Warrior, Memory of Michurin, Pepin Shafranny, Rossoshanskoye Striped, Spartan, Welsey, Northern Sinap, Sinap Orlovsky. When stored in production chambers with RGS, on average for 1984-1986, the yield of marketable fruits was 93.8-99.7% (Table 10).
The average selling price of apples from RGS was 930 rubles/ton; additional profit in the 10th five-year plan is 96 rubles/ton, in the 11th - 173 rubles/ton compared to conventional refrigerated storage (in 1986 prices).
One of the types of storing fruits in a gas environment is storage in plastic packaging. For this purpose, food film with a thickness of 30-40 microns and a bag capacity of 2-3 kg is used. The fruits, cooled after picking, are placed with the stalk inward, tied tightly or welded and placed in a refrigerator or fruit storage. The method can be recommended for amateur gardeners.
For storage in a gas environment, it is better to remove the fruits of most varieties from the tree at the beginning of ripeness. For varieties whose fruits are especially susceptible to wilting (Welsy, Melba, Bessemyanka Michurinskaya, Mekintosh, Olimpiyskoye, Pamyat Voinu, etc.), it is better to store early harvested fruits in chambers with a controlled gas environment, which will protect them from wilting. Subsequent batches of apples taken from the tree in a state close to full ripeness (late harvesting date) should be stored in ordinary chambers.
Ability of fruits to preserve commercial qualities after storage it is called the “residual effect” of storage. Our experience has shown that fruits after storage in RGS retained commercial quality at elevated temperatures for much longer (12-15 days) than after storage in regular refrigerator(5-6 days). Fruits from RGS withered less, had denser juicy pulp and were rated higher in appearance and taste at tastings.
In some years, on fruits from the RGS in varieties prone to tanning, such as Northern Sinap, Renet Chernenko, Sinap Orlovsky and others, after storage at a temperature of 18-20 ° C this disease intensively developed, while on fruits from the refrigerator the development of tanning it went slower. For such varieties, it is recommended to quickly sell the fruits after opening the chamber.
Losses during storage consist of weight loss, absolute waste, technical defects, and deterioration in marketability and nutritional quality. Varietal differences in the degree of storage stability are quite large. Thus, the greatest losses in terms of loss of fruit weight were observed in the varieties Olimpiyskoe (1.69% in terms of 30 days of storage), Kulikovskoe (1.59%), Orlovskoe Polosatoe (1.55%), Renet Chernenko (1.47%), Orlik (1.38%), Pepin Saffron (1.37%), Mekanis (1.33%). The fruits of these varieties are subject to significant wilting during storage. The greatest mass losses occur in initial period storage, therefore it is especially important to create appropriate conditions during the first storage period.
In contrast to weight loss, which occurs relatively evenly, the development of diseases can be progressive, with significant outbreaks, which can lead to large losses in storage. Therefore, the study of fruit diseases characteristic of varieties and the development of measures to prevent them are important tasks for reducing storage losses.
In the middle zone, the most common storage diseases are microbiological - various types rot: fruit, gray, brown and others; barn scab, late blight. Among the physiological diseases, tanning, low-temperature burn, wilting, filling, browning of the pulp and core, over-ripening, and plumpness are common.
According to our observations, fruits of the following varieties are relatively resistant to rot pathogens: Osenneye Polosatoe, Korichnoe Polosatoe, Slava Peremozhtsam, Melba, Antonovka Obyknovennaya, Sinap Orlovsky. For the first four above-mentioned autumn varieties, the end of storage is usually due to overripening of the fruits, loss of taste, and not rotting of the fruits.
Barn scab for last years has become one of the most common diseases of apples in the refrigerators of state farms in the middle zone. The fungus that causes barn scab is highly resistant to cold, and therefore even low refrigerator temperatures cannot prevent the development of this disease. Mass manifestation most often occurs in January - February. At the first sign of scab (in the form of small black dots over the entire surface of the fruit), apples should be sold immediately.
According to our data, fruits of the following varieties are highly susceptible to barn scab in refrigerator conditions: Northern Sinap (3.0%), Antonovka Novaya (6.0%), Vityaz (5.8%), Zhigulevskoe (9.7%), Mekintosh (7.8%), Lobo (16.4% of affected fruits on average over the years of recording).
Storage in RGS reduces the incidence of fruit scab. Thus, the fruits of the Northern Sinap variety were affected by granary scab by 0.2% when stored in the RGS, and by 9.8% when stored in the refrigerator. The same pattern was noted for other varieties. The main measures to combat barn scab are the selection resistant varieties, storage in the RGS, disinfection of containers, storage and treatment of trees in the garden against scab.
Physiological diseases or functional disorders arise as a result of disruption of physiological and biochemical processes in fruits. Thus, low calcium content in apples leads to bitter pitting of fruits during storage. The most common physiological diseases in refrigerators in the middle zone are: tanning, low-temperature burn (“wet burn”), darkening of the core, browning of the pulp, filling, wilting, over-ripening.
Sunburn is one of the most common physiological diseases; it manifests itself in the browning of the skin of fruits. The fruit pulp under the skin remains light, but later deeper browning begins to occur, and fruit rot develops. Brown spots on the surface of the skin do not affect the taste, but reduce the marketability of the fruit.
Cultivars vary widely in their susceptibility to sunburn, but no cultivars are completely resistant. The varieties Antonovka Obyknovennaya, Vityaz, Northern Sinap, Renet Chernenko are most sensitive to tanning. In some years, a slight tan is observed on the fruits of Osenniy Polosatogo, Martovskoye, and Bogatyr.
Fruits are more affected by sunburn after a hot, dry summer. Storage at low temperatures and good ventilation, packaging of fruits in oiled wrappers reduces the incidence of fruit sunburn.
The following varieties had the greatest resistance to physiological diseases (affected fruits were less than 0.5%): Buninskoye, Veteran, Pamyat Voinu, Lobo, Kulikovskoye. At the same time, some varieties showed a greater tendency of fruits to physiological diseases: Osenneye Aloe, Antonovka Obyknovennaya, Mezenskoye, Pepin Shafranny, Zhigulevskoye, Vityaz, Renet Chernenko.
Thus, the correct organization of industrial storage of apples is, first of all, the selection of commercial varieties and the determination of optimal storage conditions for each variety. Garden factors play a certain role in shaping the keeping quality of fruits, which we do not touch upon here due to the brevity of the presentation.
