The nutria meat should be poured with marinade without cutting and applied with a heavy load so that it stands in this form for at least 4 hours, after which it is necessary to remove the meat from the marinade, dry it, wipe it dry and chop finely chopped pork fat.

On a grater, you need to grate fresh ginger root, add garlic crushed in garlic, vegetable oil and pepper to taste. Mix the ingredients and rub the whole nutria carcass inside and out with them, then stuff it with lingonberries and cranberries, as well as wild garlic. Sew up the belly of the nutria with dense threads.

To all that remains of the mixture of ginger and garlic, add sour cream and coat the outside of the carcass with this sauce so that a beautiful golden crust forms during the frying process.

The potatoes should be cut into thick circles and put on a baking sheet on top of the foil, put the nutria wrapped in foil on top of it. Put all parts of the dish in the oven for at least 2 hours.   • spices - 1 tsp each red pepper, coriander, tarragon;
  • 3 pcs. - cloves, bay leaves.

Attention! You do not need to add salt to the marinade, otherwise the kebab will become tough.

Cut into pieces, separated from subcutaneous fat, soak nutria meat in marinade for 3-12 hours.
Immediately before stringing on skewers, drain the marinade into a separate container (preferably a bottle). During frying, pour the slices with heated marinade, adding salt to it, to form an appetizing crust. Serve barbecue with tomatoes and lots of greens.
